For a richer flavor, brown the ground turkey in a mixture of olive oil and butter.
Feel free to add other vegetables such as celery, zucchini, or corn.
If you don't have quick-cooking barley, you can use regular barley, but you'll need to increase the simmering time.
For a thicker soup, mash a few of the potatoes against the side of the pot.
