Step

Season the shrimp generously with salt and pepper. Set aside. (5 minutes)

In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add the lemon juice, steak sauce, Worcestershire sauce, and sherry or Madeira. (2 minutes)

In a small bowl, whisk together the flour and water until smooth. Gradually whisk this mixture into the saucepan with the steak sauce. (1 minute)

Cook, stirring constantly, until the sauce has thickened and is smooth. Adjust the consistency as needed by adding a touch more steak sauce if too thin, or a splash of sherry if too thick. Keep warm over low heat. (5-7 minutes)

In a large skillet, combine the remaining 2 tablespoons of butter and canola oil over high heat. Once the butter is melted and the pan is hot, add the seasoned shrimp. (1 minute)

Cook the shrimp, stirring occasionally, until they turn pink and opaque. Be careful not to overcook! (3-5 minutes)

Transfer the cooked shrimp to a heated serving platter and generously drizzle with the prepared sauce. Serve immediately. (1 minute)

For a spicier kick, add a pinch of red pepper flakes to the sauce.
The sauce can be made ahead of time and reheated gently before serving.
Serve with a side of crusty bread to soak up every last drop of the amazing sauce.
Make sure to not overcook the shrimp.
