Prepare the Tofu: Wrap the drained tofu in a paper towel and microwave for 1 minute to further remove moisture. Squeeze out any excess water, re-wrap in a dry paper towel, and let it sit for about 5 minutes to drain completely. Remove the paper towel and cut the tofu into cubes.

Prepare the Sauce and Meat: In a bowl, combine the cubed luncheon meat, chopped garlic, and minced fresh ginger. In a separate bowl, whisk together the sake, miso paste, soy sauce, and white sugar until well combined.

Scramble the Eggs and Cook the Tofu: Heat 2 teaspoons of vegetable oil in a skillet over medium heat. Pour in the slightly beaten eggs and cook, stirring constantly, until scrambled and fully cooked (approximately 5 minutes). Transfer the scrambled eggs to a plate. In the same skillet, add more oil if needed and cook the tofu cubes until browned on all sides (5-10 minutes). Transfer the tofu to the plate with the eggs. Next, cook and stir the luncheon meat mixture in the same skillet until cooked through and the garlic is lightly browned (about 5 minutes).

Sauté the Vegetables: In a separate skillet, heat 2 teaspoons of vegetable oil over medium heat. Add the chopped onion, cabbage, grated carrots, and sliced mushrooms. Cook and stir until the onions are translucent and the cabbage is softened (10-12 minutes).

Combine and Finish: Add the scrambled eggs, cooked tofu, luncheon meat mixture, and sake mixture to the skillet with the vegetables. Stir to coat all ingredients evenly. Cook until everything is heated through (about 1 minute). Garnish with chopped green onion before serving.

For a vegetarian version, substitute the luncheon meat with your favorite plant-based protein or add more tofu.
Adjust the amount of ginger, garlic, and green onion to your preference.
Feel free to add other vegetables like bell peppers or bean sprouts for added texture and flavor.
Serve immediately with a side of rice for a complete meal.
