For a smoother consistency, use an immersion blender to puree the soup after simmering. Be careful when blending hot liquids! If you don't have Gorgonzola, Roquefort or another blue cheese can be substituted. Fresh basil can be used in place of dried basil. Use about 2 tablespoons of chopped fresh basil, adding it at the end of the simmering time. To add a touch of heat, try a pinch of red pepper flakes. Serve with a swirl of cream and a sprinkle of fresh basil for an elegant presentation.
