Prepare Your Jars: Inspect two pint-sized jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water. (Prep time: 15 minutes)

Combine and Simmer: Combine the halved cherry tomatoes, sugar, chopped basil, sweet onion, balsamic vinegar, lemon juice, salt, pepper, coriander, and cumin in a medium saucepan over medium heat. Bring to a boil, stirring occasionally. (Cook time: 15 minutes)

Reduce and Thicken: Reduce the heat to low and simmer, stirring occasionally, until the mixture has thickened and reduced by half. This process may take 2 to 3 hours, depending on the juiciness of your tomatoes. (Simmer time: 120-180 minutes)

Jar and Preserve: Divide the hot jam between the hot, sterilized jars, leaving about 1/4 inch of headspace at the top. Run a clean knife or thin spatula around the insides of the jars to remove any trapped air bubbles. Wipe the rims clean with a moist paper towel to remove any residue. (Prep time: 10 minutes)

Cool and Seal: Allow the filled jars to cool slightly, then top with the lids and screw the rings on tightly. Refrigerate for up to two weeks or freeze for up to four months. (Cool time: 60 minutes)

For a spicier kick, add a pinch of red pepper flakes to the mixture while simmering.
If you prefer a smoother jam, you can use an immersion blender to partially blend the mixture after it has simmered.
This jam is also delicious served alongside grilled meats or roasted vegetables.
