Follow The Directions

01

Step
5 mins

Prepare your baking sheets by lightly greasing two of them. (5 minutes)

02

Step
2 mins

In a medium saucepan, melt the butter over medium heat. Add the brown sugar and salt, stirring to combine. Gradually whisk in the corn syrup and sweetened condensed milk. (2 minutes)

03

Step
20 mins

Continue cooking, stirring occasionally to prevent scorching, until the mixture reaches 250°F (121°C) on a candy thermometer, or until a small drop of the caramel forms a firm ball when dropped into cold water. This will take approximately 15-20 minutes.

04

Step
2 mins

Remove the saucepan from the heat. Stir in the chopped pecans and vanilla extract until evenly distributed. (2 minutes)

05

Step
10 mins

Drop spoonfuls of the caramel-pecan mixture onto the prepared baking sheets, spacing them about 1 inch apart. (10 minutes)

06

Step
45 mins

Allow the caramels to cool completely and firm up. This will take about 30-45 minutes at room temperature, or you can speed up the process by refrigerating them for 15-20 minutes.

07

Step
5 mins

In a heatproof bowl set over a saucepan of simmering water (or in the microwave in 30-second intervals), melt the chocolate chips, stirring frequently until smooth. (5 minutes)

08

Step
15 mins

Dip each cooled caramel into the melted chocolate, ensuring it's fully coated. Place the chocolate-covered caramels back onto the prepared baking sheets. (15 minutes)

09

Step
30 mins

Let the chocolate set completely. You can refrigerate the candies for a quicker set. (30 minutes)

For a richer flavor, use salted butter and omit the added salt.
If you don't have a candy thermometer, use the cold water test to determine when the caramel is ready. Drop a small amount of caramel into a glass of cold water. If it forms a firm ball, it's ready.
Experiment with different types of nuts, such as walnuts or almonds.
For a festive touch, sprinkle the chocolate-covered caramels with sea salt or chopped nuts before the chocolate sets.
