Preheat the oven to 350 degrees F (175 degrees C). Prepare two 8-ounce ramekins by lightly coating the bottom and sides with cooking spray. (5 minutes)

In a blender, combine the rolled oats, almond milk, mashed banana, cocoa powder, maple syrup, baking powder, vanilla extract, and salt. Blend until the mixture is smooth and fully incorporated. (1-2 minutes)

Divide the blended mixture evenly between the prepared ramekins. Sprinkle 1 tablespoon of vegan chocolate chips over the top of each ramekin. (2 minutes)

Bake in the preheated oven until the oats are firm to the touch, approximately 25 minutes. Let cool slightly before serving. (25 minutes)

For a richer flavor, use dark cocoa powder.
Feel free to experiment with different toppings! Nuts, seeds, or fresh fruit would all be delicious additions.
If you don't have ramekins, you can bake this in a small oven-safe dish.
These baked oats can be made ahead of time and reheated for a quick breakfast during the week.
