For a creamier texture, blend a portion of the soup before adding the spinach.
Feel free to add other vegetables like carrots or bell peppers for extra nutrients and flavor.
If you don't have fresh ginger, 1 teaspoon of ground ginger can be substituted.
Adjust the amount of curry powder to suit your spice preference.
