For best results, soak the skewers in water for at least 30 minutes before using. This will prevent them from burning in the oven. If the kofta mixture is too soft, add a little more breadcrumbs or bulgur to help bind it together. Feel free to adjust the amount of hot sauce to your liking. If you prefer a milder flavor, you can omit it altogether. These kabobs can also be grilled over medium heat for about 10-12 minutes, turning occasionally, until cooked through and slightly charred. Leftover kofta kabobs can be stored in the refrigerator for up to 3 days. Reheat them in the oven or microwave before serving.
