Spread half of the mustard mixture evenly over one side of each steak. Allow to marinate for 30 minutes. (Marinating time: 30 minutes)

In a large skillet, cook bacon over medium-high heat until crisp and browned, approximately 7-9 minutes. (Cooking time: 7-9 minutes)

Transfer the cooked bacon to a paper towel-lined plate to drain. Once cool enough to handle, crumble the bacon into small pieces.

Leave the bacon grease in the skillet. Heat the grease over medium-high heat, adding olive oil if needed to coat the bottom of the pan.

Carefully place the steaks, mustard-side down, into the hot skillet. Fry until golden brown, about 5 minutes. (Cooking time: 5 minutes)

Spread the remaining mustard mixture over the top of the steaks. Flip and fry until browned on the other side and cooked to your desired doneness, about 2 minutes for medium-rare. (Cooking time: 2 minutes)

Transfer the steaks to a serving platter and keep warm.

Pour the bourbon whiskey into the skillet, being careful as it may flame. Stir in the chopped fresh rosemary, Worcestershire sauce, brown sugar, lemon juice, and the reserved 2 teaspoons of mustard. (Prep time: 3 minutes)

Simmer the sauce over medium-high heat, stirring occasionally, until it thickens slightly, about 2 minutes. (Cooking time: 2 minutes)

Serve the steaks immediately, topped with the crumbled bacon and generously drizzled with the whiskey sauce.

For best results, use a high-quality bourbon. The better the bourbon, the richer the sauce.
