In a bowl, whisk together 6 tablespoons of za'atar and 0.33 cup of olive oil. Dip each dough ball into the za'atar-oil mixture, ensuring all sides are coated. Place 3 dough balls in each muffin cup. Sprinkle the remaining 2 tablespoons of za'atar over the dough.

Cover the muffin tin loosely with greased plastic wrap. Let rise until the dough balls puff up over the rim of the tin, about 25 minutes.

Bake in the preheated oven until puffed up and golden brown, about 25 minutes. Cool in the pan for 5 minutes. Then, carefully lift the rolls out of the pan and cool briefly on a wire rack for about 5 minutes more.

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the za'atar mixture.
Serve warm with a side of labneh, olives, and fresh mint for a truly authentic Middle Eastern experience.
The dough can be made a day in advance and stored in the refrigerator after the first rise. Just punch it down before refrigerating and let it come to room temperature before shaping the rolls.
