Combine Ingredients: In a slow cooker, combine the vegetable broth, diced tomatoes, carrots, onion, turnips, green bell pepper, unsalted butter, minced ginger, minced garlic, ground coriander, ground cumin, and salt. Stir well to ensure even distribution of the spices.

Add Lentils: Stir in the softened and rinsed lentils into the slow cooker, ensuring they are fully submerged in the broth.

Slow Cook: Cover the slow cooker and cook on High setting until the carrots are tender, typically between 4 to 6 hours.

For a richer flavor, sauté the onions, carrots, and garlic in butter for about 5-7 minutes before adding them to the slow cooker.
Feel free to add other vegetables such as celery, zucchini, or spinach to suit your taste.
If you don't have a slow cooker, you can simmer the soup on the stovetop in a large pot for about 1 to 1.5 hours, or until the lentils and vegetables are tender.
Serve with a dollop of Greek yogurt or a sprinkle of fresh herbs for added freshness.
