For a deeper flavor, try adding a pinch of ground ginger or a bay leaf to the syrup. If you prefer a less sweet pickle, reduce the amount of sugar to 1/2 cup. These pickled beets are excellent as a side dish, in salads, or as a colorful addition to a cheese board.
