Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions. (5 minutes)

Heat oil in a medium skillet over medium heat. Add onion and cook until soft and translucent, approximately 4 to 6 minutes. Add chicken, Neufchâtel cheese, green chiles, chicken broth, taco seasoning, salt, and pepper. Cook and stir until the mixture is well combined and the Neufchâtel cheese has melted evenly, about 3 to 5 minutes.

Warm tortillas in a large skillet or directly on the grates of a gas stove until soft and pliable, a few seconds per side. Place about 1/3 cup of the chicken mixture down the center of each tortilla. Top with a heaping tablespoon of shredded Mexican cheese. Fold in the top and bottom edges of the tortilla over the filling, then roll tightly into a burrito shape. Mist each chimichanga lightly with avocado oil cooking spray and place seam-side down in the basket of the preheated air fryer.

Air-fry for 4 to 6 minutes, or until golden brown on the bottom. Flip each chimichanga over, mist lightly with cooking spray, and continue to air-fry for an additional 2 to 4 minutes, or until golden brown and crispy on both sides.

For extra flavor, consider adding a pinch of cumin or smoked paprika to the chicken mixture.
Feel free to substitute ground beef, shredded pork, or black beans for the chicken.
Serve immediately with your favorite toppings such as salsa, sour cream, guacamole, chopped cilantro, and a squeeze of lime juice.
Adjust the amount of green chiles to your preferred level of spiciness.
