In a bowl, whisk the eggs until well combined. In a separate, wide bowl, thoroughly mix together the flour, plain bread crumbs, panko bread crumbs, kosher salt, onion powder, garlic powder, black pepper, paprika, and seafood seasoning. (5 minutes)

One at a time, dip each mushroom into the beaten eggs, allowing any excess to drip off. Then, dredge the mushroom in the seasoned crumb mixture, ensuring it's fully coated. For an extra crispy coating, dip the mushroom back into the egg and then again into the crumb mixture. Place the breaded mushrooms on a plate. (15 minutes)

Carefully arrange a batch of breaded mushrooms in the air fryer basket, making sure they are not overlapping to allow for even cooking. Lightly spray the mushrooms with nonstick cooking spray. Air fry for 6 minutes. Shake the basket to redistribute the mushrooms, and spray any dry spots with more cooking spray. Continue cooking for another 6 minutes, or until golden brown and crispy. Repeat with the remaining mushrooms. (15 minutes)

For best results, use small, similarly sized cremini mushrooms to ensure even cooking.
Don't overcrowd the air fryer basket; work in batches to achieve maximum crispiness.
Feel free to experiment with different seasonings in the crumb mixture, such as cayenne pepper for a touch of heat, or dried herbs for an earthy flavor.
Serve immediately with your favorite dipping sauce, such as ranch dressing, garlic aioli, or a spicy sriracha mayo.
