For a richer flavor, sear the beef in a skillet before adding it to the slow cooker. Feel free to add other vegetables like celery, carrots (if not using frozen mix), or diced bell peppers. Adjust the seasoning to your liking. You may need more or less salt and pepper depending on your preference. If you want a thicker soup, mash some of the potatoes against the side of the slow cooker during the last hour of cooking.
