Follow The Directions

Add the mustard seeds and wait until they begin to splutter, then add the asafoetida, cumin seeds, turmeric powder, and the split green pepper. (1 minute)

Introduce the chopped tomatoes and minced ginger to the pan. Stir well and sauté for a few minutes until the tomatoes soften and release their juices. (5 minutes)

Incorporate the cubed potato, cauliflower florets, sugar, and salt. Stir everything thoroughly to combine the spices and vegetables. (2 minutes)

Cover the pan and cook until the potatoes are cooked through and the cauliflower is tender yet still slightly crunchy. For a crisper cauliflower, add it to the pan when the potatoes are nearly done but not fully cooked. (15-20 minutes)

Asafoetida (hing) has a pungent aroma and adds a unique depth of flavor. It can usually be found at Indian grocery stores.
Adjust the amount of green pepper based on your preferred spice level.
Garnish with fresh cilantro for added freshness.
