Follow The Directions

01

Step
5 mins

Preheat oven to 400 degrees F (200 degrees C). (5 minutes)

02

Step
5 mins

In a medium bowl, combine crushed amaretto cookies with 1/2 cup softened butter until well combined. Set aside. (5 minutes)

03

Step
5 mins

In a separate large bowl, mash drained sweet potatoes with 1/4 cup softened butter until smooth. Add brown sugar, orange marmalade, amaretto liqueur, and ground ginger. Mix well to incorporate all ingredients. (5 minutes)

04

Step
2 mins

Pour sweet potato mixture into a 9x9-inch baking dish. Evenly distribute the amaretto cookie mixture over the top of the sweet potato mixture. (2 minutes)

05

Step
30 mins

Bake in the preheated oven until cooked through, bubbling, and the topping is lightly golden brown, about 30 minutes. (30 minutes)

06

Step
5 mins

Let cool slightly before serving. (5 minutes)

For a richer flavor, use homemade orange marmalade.
If you don't have amaretto liqueur, you can substitute with almond extract, but use sparingly as it can be quite potent.
To prevent the cookie topping from burning, loosely tent the dish with foil during the last 10-15 minutes of baking if needed.
This dish can be assembled ahead of time and refrigerated until ready to bake. Add about 10-15 minutes to the baking time if baking from cold.
Feel free to adjust the amount of amaretto liqueur to your liking. Start with 1 teaspoon and add more to taste.
