For a richer flavor, try browning the ground beef in butter before adding the vegetables. Add other vegetables to the casserole. Some good choices are mushrooms, carrots, or zucchini. If you don't have cottage cheese, you can substitute ricotta cheese. To reduce the fat content, use low-fat sour cream and cottage cheese. Feel free to use different cheese. Monterey Jack or Mozzarella could be used. This casserole can be assembled ahead of time and baked later. Just cover it tightly and refrigerate until ready to bake.
