In a small saucepan, combine water, cider vinegar, sugar, allspice berries, cloves, nutmeg, and ginger. Bring to a simmer over medium-high heat, stirring until the sugar is completely dissolved. (Approximately 5 minutes)
While the syrup simmers, gently toss the sliced apples with lemon juice to prevent browning. Pack the apple slices tightly into two sterilized 1-quart canning jars with lids and rings.
