For a tarter leather, increase the lemon juice to 1 1/2 teaspoons. Other fruits like plums or peaches can be added to, or substituted for, the apricots. If you don't want to use sugar, honey or agave nectar can be substituted. Start with 1/4 cup and adjust to taste. For a spicy kick, add a pinch of ground cinnamon, nutmeg or ginger to the apricot mixture before pureeing. A dehydrator can be used instead of an oven, follow the dehydrator's instructions for fruit leather.
