For an extra layer of flavor, try toasting some pine nuts or slivered almonds and adding them to the salad. If you don't have Kalamata olives, Castelvetrano olives also work well. Make sure to slice the fennel very thinly for the best texture and flavor. The dressing can be made ahead of time and stored in the refrigerator for up to 3 days. Be sure to whisk it again before using.
