**Combine and Knead the Dough (30-40 minutes):** In a large mixing bowl, combine the rye flour, the remaining 4 cups of all-purpose flour, sea salt, and 1 teaspoon of sugar. Add the prepared sourdough starter and 2 cups of warm water. Mix with a wooden spoon until a shaggy dough forms. If using a stand mixer, mix on low speed for the first few minutes. Due to the density of the dough, you may need to continue kneading by hand on a lightly floured surface. Knead for 15-20 minutes, adding a few tablespoons of water at a time if the dough is too stiff, until a smooth and elastic dough is achieved.
