Follow The Directions
01
Step
5 mins
Prepare the Grill: Preheat an outdoor grill to medium-high heat (about 375°F or 190°C). (5 minutes)
02
Step
2 mins
Prepare the Foil Packet: Place one square of aluminum foil on a flat surface. Arrange the walleye fillets in the center of the foil, leaving a little space between each fillet.
03
Step
3 mins
Season the Walleye: Generously brush the melted, clarified butter over the walleye fillets. Sprinkle evenly with seasoned salt and garlic-herb seasoning blend. (2 minutes)
04
Step
16 mins
Seal the Packet: Place the second square of aluminum foil over the fillets. Fold the edges of the foil together tightly, creating a secure, airtight seal. Ensure there are no gaps where steam can escape. (3 minutes)
05
Step
2 mins
Grill the Walleye: Carefully place the sealed foil packet on the preheated grill. Cook for approximately 7-8 minutes per side, or until the fish is cooked through and flakes easily with a fork. The packet will puff up as it steams. (16 minutes)
06
Step
Rest and Serve: Remove the foil packet from the grill and let it rest for a minute or two before carefully opening. Be cautious of escaping steam. Garnish with fresh parsley and serve immediately with lemon wedges, if desired.
For best results, use high-quality walleye fillets. Fresh is always preferable, but frozen fillets, thawed completely, will also work well.
Clarifying the butter removes milk solids, which prevents burning and adds a richer flavor.
Don't overcook the fish! Walleye is delicate and can dry out easily. It's done when it flakes easily with a fork.
Feel free to experiment with other seasonings. A pinch of red pepper flakes, a squeeze of lemon juice, or a dash of smoked paprika can add a unique twist.
If you don't have a grill, you can bake the foil packet in a preheated oven at 375°F (190°C) for about 20-25 minutes.

Mar 9, 2025This recipe is fantastic! The foil packet method keeps the walleye incredibly moist and flavorful. I added a little lemon zest to the butter, and it was a hit!

Mar 7, 2025I've made this several times now, and it's always a winner. The garlic and herb seasoning blend adds just the right amount of flavor without overpowering the delicate walleye.

Mar 4, 2025So easy and delicious! Perfect for a quick weeknight meal. I used skin-on fillets, and the skin crisped up beautifully in the foil packet.
