Follow The Directions

01

Step

In a food processor, combine the minced garlic, cubed papaya, water, white wine, honey, and tomato paste. Pulse until the mixture is finely chopped and well combined. (Approximately 15 seconds)

02

Step

Place the baby back ribs in a 9x13-inch glass baking dish. Pour the papaya marinade evenly over the ribs, ensuring they are thoroughly coated. Cover the dish with plastic wrap and refrigerate for at least 6 hours, or preferably overnight for the most intense flavor. (6-12 hours)

03

Step

Preheat your oven to 400 degrees F (200 degrees C).

04

Step

Remove the marinated ribs from the dish, gently shaking off any excess marinade. Transfer the reserved marinade into a small saucepan and bring it to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for 10 minutes. Set aside for basting. (10 minutes)

05

Step

Arrange the ribs on a baking sheet and bake in the preheated oven until the meat is tender and easily pulls away from the bone. This should take approximately 1 1/2 hours. During the baking process, baste the ribs every 15 minutes with the simmering papaya marinade to ensure a deliciously glazed finish. (90 minutes)

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the marinade for a subtle kick.
If fresh papaya is unavailable, you can substitute with a high-quality papaya puree. Adjust the amount of water accordingly to achieve the desired consistency.
Ensure the ribs are fully cooked before serving. The meat should be easily separated from the bone when gently pulled.
The basting process is crucial for caramelization and flavor development. Don't skip it!

I was skeptical about the papaya, but it made the ribs incredibly tender and moist. Will definitely make again!
