For a richer flavor, use fresh corn kernels cut straight from the cob. You will need about 2 cups.
If you don't have buttery round crackers, you can substitute with bread crumbs tossed with melted butter and a pinch of salt.
Feel free to add a pinch of red pepper flakes for a touch of heat.
To make ahead, assemble the casserole and refrigerate it (unbaked) for up to 24 hours. Add an extra 5-10 minutes to the baking time if baking from cold.
