Step

Preheat oven to 400 degrees F (200 degrees C). Peel potatoes (if desired) and place in a large sauce pot, covering with cold water by 1 inch. Bring to a boil, then reduce to a simmer and cook for 30-35 minutes, or until potatoes are tender-soft.

Meanwhile, in a skillet over medium-high heat, melt 2 tablespoons of butter. Cook the diced onion for 10-12 minutes, or until softened and translucent.

Drain the potatoes thoroughly and return them to the large bowl. Add the remaining butter, salt, and pepper. Using a mixer or potato masher, blend the potatoes and butter until combined, retaining a slightly chunky texture. Gently fold in the cooked onion, beaten eggs, diced ham, and chopped chives.

Line a baking sheet with parchment paper or lightly grease it. If using a ring mold or biscuit cutter, sprinkle the bottom interior with bread crumbs. Fill the mold with the potato mixture until the top is slightly rounded, then top again with bread crumbs. Carefully remove the ring and repeat with the remaining potato mixture, spacing the cakes about 1 inch apart on the prepared baking sheet.

Bake for 20-30 minutes, or until the tops are golden brown and beginning to crisp. Remove from the oven and top with shredded Parmesan cheese. Serve hot.

For extra flavor, try adding a pinch of garlic powder to the potatoes while mashing.
These cakes can be prepared ahead of time and stored in the refrigerator until ready to bake. Just add a few extra minutes to the baking time.
Experiment with different cheeses! Gruyere or cheddar would also be delicious.
If you don't have a ring mold, simply form the potato mixture into patties by hand.
