For the best flavor, use very ripe bananas (the ones with lots of brown spots!). To make oat flour, simply grind 1 1/4 cups of rolled oats in a blender or food processor until finely ground. This recipe calls for 1 cup of oat flour; there will be some left over. Feel free to substitute pecans or other nuts for the walnuts. For a richer flavor, use browned butter in the topping. A dusting of powdered sugar after cooling is a nice finishing touch.
