Preheat an outdoor grill for medium heat and lightly oil the grate. (5 minutes)

In a medium bowl, mix the chopped cooked chicken with 2 tablespoons of barbecue sauce until evenly coated. (2 minutes)

Roll the pizza dough onto a lightly floured work surface and cut in half to form 2 rectangles. Brush the top of each rectangle generously with olive oil. (5 minutes)

Place the dough rectangles, oil-side down, onto the preheated grill. Cook until the bottom of the dough is nicely browned and the top is bubbling up. (Approximately 5 minutes). Brush the tops of each dough with more olive oil and carefully flip.

Spread the remaining barbecue sauce evenly over each pizza crust. Top with the barbecue chicken mixture, shredded Colby-Monterey Jack cheese, and diced tomatoes. (5 minutes)

Close the lid of the grill and cook the pizzas until the cheese is fully melted and bubbly. (2 to 3 minutes). Remove the pizzas from the grill and let them cool slightly before slicing. (2 to 3 minutes)

For an extra layer of flavor, consider adding thinly sliced red onions or grilled corn to your pizza.
If you don't have pre-cooked grilled chicken, you can quickly grill chicken breasts and chop them before assembling the pizza.
Feel free to substitute the Colby-Monterey Jack cheese with your favorite cheese blend, such as mozzarella or provolone.
