For a deeper molasses flavor, use blackstrap molasses, but be aware that it will also make the cookies darker and slightly more bitter. The dough can be made ahead of time and stored in the refrigerator for up to 3 days, or frozen for up to 2 months. Thaw completely before rolling out. For a softer cookie, bake for a shorter amount of time. For a crispier cookie, bake for a longer amount of time. Feel free to experiment with different spices, such as cardamom or nutmeg, to customize the flavor to your liking.
