For a richer flavor, consider sautéing a diced onion and a clove or two of minced garlic in the vegetable oil before adding the other ingredients. Feel free to experiment with different types of beans to create your own unique blend. Cannellini beans, chickpeas, or even lentils would be excellent additions. If you prefer a thicker consistency, you can mash some of the beans against the side of the pot to release their starch. This dish pairs wonderfully with a side of crusty bread or a dollop of plain yogurt or sour cream.
