Stir in tomatoes, ham, black pepper, and vinegar. Simmer over low heat until heated through.

For an even richer flavor, consider using homemade ham stock instead of water. Adjust the amount of vinegar to your preference for a touch of brightness. This soup freezes beautifully, making it perfect for meal prepping.
Lentils: Brown or green lentils work best in this recipe. Red lentils will cook too quickly and become mushy.
Ham Broth: Ensure to use 8 cups of the ham broth from the initial cooking of the ham hocks to maintain the intended salt levels and flavor profile. If you end up with more than 8 cups, reduce the liquid before adding it to the lentils.
Vegetarian option: For a vegetarian version, omit the ham shanks and use vegetable broth. Add smoked paprika for a smoky flavor.
