For a richer flavor, use smoked bacon. Feel free to add other vegetables such as celery, leeks, or corn. For a thicker soup, mash more of the potatoes or add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water). If you don't have American cheese, cheddar, Monterey Jack, or Gruyere are all excellent substitutes. Adjust the amount of salt and pepper to your preference.
