Step

In a large, heavy-bottomed saucepan or Dutch oven, heat olive oil over high heat. Sprinkle beef cubes with 1 tablespoon salt. Add beef, onion, and garlic to the pan. Cook, stirring occasionally, until beef is browned on all sides (about 5 minutes). Reduce heat to medium and continue cooking until onions are softened and translucent (about 3 minutes). Transfer beef to a bowl and set aside.

Stir in tomato sauce and tomato paste. Add water or beef broth, okra, coriander, cumin, and white pepper. Bring to a boil, then reduce heat to low, cover, and simmer until okra is tender and the sauce has thickened slightly (30-45 minutes), stirring occasionally.

Return beef to the pan. Simmer uncovered until the flavors meld together and beef is heated through (about 10 minutes). Taste and adjust seasoning with salt as needed.

Serve hot, garnished with sliced jalapeño, if desired. Enjoy with a side of fluffy white rice or crusty bread.

For a vegetarian version, simply omit the beef and add a can of chickpeas or your favorite beans during the last 15 minutes of simmering.
Feel free to adjust the amount of jalapeño pepper to your liking, or substitute with a pinch of red pepper flakes for a touch of heat.
Beef broth adds richness and depth of flavor, but water works just as well.
For a smoother sauce, you can use an immersion blender to partially blend the sauce before adding the beef back in.
