Soak the Beans: Place the pinto beans in a large bowl and cover with at least 2 inches of cold water. Let them soak for at least 8 hours, or preferably overnight. (8-12 hours)

Simmer with Aromatics: Drain the soaked beans and transfer them to a medium saucepan. Cover the beans with fresh water, ensuring they are submerged by about 1 inch. Add the diced onion, chopped garlic, chili powder, cumin, celery seed, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and let simmer gently for 1 1/2 hours, or until the beans are tender. (1 hour 30 minutes)

Puree to Perfection: Once the beans are cooked, use a colander or slotted spoon to separate the liquid (cooking broth) from the solids. Reserve the cooking liquid! Transfer the cooked beans to a food processor. Add the fire-roasted diced tomatoes, hot sauce, Mexican oregano, and cayenne pepper. Blend until you reach your desired consistency. For a smoother texture, add back some of the reserved cooking liquid a little at a time. (5 minutes)

For extra flavor, consider adding a smoked ham hock or bacon while the beans are simmering.
Adjust the amount of hot sauce and cayenne pepper to your preferred level of spiciness.
If you don't have fire-roasted tomatoes, regular diced tomatoes will work, but the fire-roasted ones add a wonderful smoky depth.
These refried beans can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
The consistency of the beans is crucial. If you like them smoother, blend longer and add more liquid.
