Preheat oven to 375 degrees F (190 degrees C).

In a bowl, toss butternut squash with olive oil, sage, salt, and pepper. Spread on a baking sheet.

Bake until squash is tender, about 20 minutes.

Warm marinara sauce in a saucepan over low heat, about 5 minutes. In a separate pan, heat 1 tablespoon olive oil and sauté onion and 2 minced garlic cloves until golden, 5-7 minutes. Add to marinara sauce and remove from heat.

In the same pan, heat 1 tablespoon olive oil and cook spinach until wilted, about 3 minutes. Drain excess moisture and transfer to a bowl. Add turkey, remaining garlic, Italian seasoning, and crushed red pepper. Cook until turkey is browned, 5-7 minutes. Season with salt and pepper and combine with spinach.

Remove butternut squash from oven and keep the oven on.

Cook lasagna noodles in boiling salted water until al dente, about 8 minutes. Drain and lay flat to prevent sticking.

In a bowl, mix cooked butternut squash, ricotta cheese, and eggs until smooth.

Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking pan. Layer 3 lasagna noodles, followed by ricotta mixture and turkey mixture. Repeat layers twice more, ending with noodles.

Top with mozzarella and Parmesan cheeses.

Bake for about 45 minutes until golden and bubbly. Let cool for 10 minutes before slicing and serving.

For a richer flavor, use full-fat ricotta cheese.
Feel free to add other vegetables like mushrooms or zucchini to the turkey mixture.
If the lasagna starts to brown too quickly, cover it loosely with foil during the last 15 minutes of baking.
