In a medium saucepan, combine the water and rinsed quinoa. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer until the quinoa is tender and all the water has been absorbed, about 15-20 minutes. Remove from heat and allow to cool slightly.

While the quinoa is cooking, prepare the dressing. In a small bowl, whisk together the olive oil, lime juice, cumin, and 1 teaspoon of salt until well combined.

In a large bowl, combine the cooled quinoa, drained and rinsed black beans, and diced cucumber.

Pour the lime-cumin dressing over the quinoa mixture and toss gently to coat all ingredients evenly. Stir in the chopped fresh cilantro.

Season the salad with additional salt and freshly ground black pepper to taste. For best flavor, refrigerate for at least 30 minutes before serving to allow the flavors to meld. Alternatively, serve immediately.

For an extra layer of flavor, try toasting the quinoa in a dry pan for a few minutes before cooking it. This brings out its nutty notes.
Feel free to add other vegetables such as bell peppers, red onion, or corn to customize this salad to your liking.
If you don't have fresh lime juice, bottled lime juice can be substituted, but fresh is always preferred for the brightest flavor.
This salad can be made ahead of time and stored in the refrigerator for up to 3 days. The flavors will continue to develop as it sits.
