Step

In a blender, combine the flour, milk, eggs, and salt. Use a spatula to dislodge any flour stuck to the sides, ensuring it's incorporated into the liquid. (5 minutes)

Melt 1 tablespoon of butter in a crepe pan or non-stick frying pan over medium heat. (2 minutes)

With the blender on low speed, slowly pour in the melted butter. Then, increase the blender speed to high for just 2-3 seconds to ensure a smooth batter, free of lumps. (1 minute)

Lift the hot pan from the burner and quickly pour in a small amount of batter, tilting the pan in a circular motion to thinly coat the bottom. Pour any excess batter back into the blender. Use a spatula to clean any batter from the lip of the pan, and rinse the spatula if any partly-cooked batter clings to it. (2 minutes)

Cook the crepe over medium heat, checking frequently. When the bottom is lightly golden brown (about 1-2 minutes), carefully flip the crepe and cook for another minute, or until golden brown, being careful not to overcook it. (3 minutes)

Transfer the crepe to a serving plate. Repeat with the remaining batter, greasing the pan lightly with butter between crepes if needed. (20 minutes)

For extra flavor, try adding a teaspoon of vanilla extract or a pinch of nutmeg to the batter.
The batter can be made ahead of time and stored in the refrigerator for up to 24 hours. Stir well before using.
Serve with your favorite toppings such as fresh fruit, whipped cream, chocolate sauce, or a dusting of powdered sugar.
If you don't have a blender, you can whisk the ingredients together in a bowl, but be sure to whisk vigorously to avoid lumps.
A well-seasoned crepe pan is ideal for even cooking, but a non-stick frying pan will also work well.
