For a richer flavor, brown the butter before melting it. Be careful not to burn it! To keep the pancakes warm while you cook the rest, place them on a wire rack in a preheated oven at 200°F (93°C). If you don't have pine nuts, chopped pecans or walnuts make a great substitute. For a vegan version, substitute the egg with 1 tablespoon of ground flaxseed mixed with 3 tablespoons of water, and use plant-based milk and butter.
