Combine and Simmer: Drain and rinse the soaked beans. Transfer them to a large, heavy-bottomed pot. Add the chicken broth, smoked ham hock, black pepper, and remaining salt. Bring to a boil over medium heat. (15 minutes)

Slow Simmer to Perfection: Once boiling, reduce the heat to low, cover, and gently simmer for approximately 4 hours, or until the beans are tender and creamy. Check periodically and add water as needed to maintain a slightly soupy consistency. (4 hours)

Final Touches: Before serving, remove the ham hock from the pot. Shred any meat from the ham hock and return it to the beans for added flavor and texture. Season with additional salt and pepper to taste. (5 minutes)

For a vegetarian version, omit the ham hock and add 1 teaspoon of smoked paprika to the beans for a smoky flavor.
To deepen the flavor profile, consider adding a diced onion and a clove or two of minced garlic to the pot during the last hour of simmering.
