Adjust the amount of sugar and black pepper to your personal preference. If you don't have pear juice, a dry white wine or even apple juice can be used as a substitute. Grated Asian pear is ideal. Bulgogi is also delicious stir-fried in a wok or large skillet if you don't have access to a grill pan.
