Follow The Directions

01

Step

Preheat the oven to 375 degrees F (190 degrees C). (5 minutes)

02

Step

Place butternut squash, cut-side up, in a 9x13-inch baking dish; cover with aluminum foil.

03

Step

Bake in the preheated oven until squash is tender, about 45 minutes. Cool slightly. Scoop flesh from butternut squash and transfer to a bowl; mash.

04

Step

Cook and stir pine nuts in a dry, heavy skillet over medium heat until toasted and fragrant. (3-5 minutes)

05

Step

Stir pine nuts, rice, bread crumbs, Parmesan cheese, basil, egg, ginger root, garlic, salt, and black pepper into mashed butternut squash until evenly combined; shape into patties.

06

Step

Heat oil in a heavy skillet over medium heat; cook patties, working in batches, until crispy and browned. (3-5 minutes per side)

For a vegan option, substitute the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes to thicken).
If the mixture is too wet, add more bread crumbs. If it's too dry, add a tablespoon of water or vegetable broth at a time until the desired consistency is reached.
Serve with a dollop of Greek yogurt or a drizzle of balsamic glaze for added flavor.

These are so versatile! I served them as a side dish, but they would also be great in a sandwich or salad.

These patties were a huge hit! My kids loved them, and they're a great way to sneak in some vegetables.

I used leftover risotto instead of plain rice, and it added even more flavor!

The ginger and basil combination is surprisingly delicious. Will definitely make again.

I found that chilling the patties for about 30 minutes before frying helped them hold their shape better.
