For a vegetarian version, omit the linguiça sausage and add a teaspoon of smoked paprika to the soup for a hint of smokiness. If you prefer a thicker soup, use a few more potatoes. For a thinner consistency, add a bit more water or broth. Tuscan kale (lacinato kale) is preferred for its delicate texture, but curly kale can be substituted. If using curly kale, massage it with a little olive oil and salt before adding it to the soup to help tenderize it. Caldo Verde is even better the next day! Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
