For a vegetarian version, substitute the linguica sausage with smoked paprika and a drizzle of smoked olive oil for a similar smoky flavor. If you don't have Tuscan kale, curly kale can be used. Massage the kale with a bit of olive oil and salt before adding it to the soup to help tenderize it. For a smoother soup, use an immersion blender to puree a larger portion of the soup after the kale is cooked.
