For a richer flavor, try using Gruyere or Parmesan cheese in addition to, or instead of, Cheddar. Add a pinch of nutmeg to the cheese sauce for a warm, comforting flavor. If you don't have bread crumbs, crushed Ritz crackers or potato chips work well as a topping. To make ahead, assemble the gratin up to the baking step. Cover and refrigerate for up to 24 hours. Add 10-15 minutes to the baking time when baking from cold.
