Follow The Directions

01

Step

Steam the Cauliflower: In a steamer basket set over a pot of simmering water, steam the cauliflower florets until tender, about 15-20 minutes. Alternatively, boil until tender, about 15 minutes. (15-20 minutes)

02

Step

Mash and Combine: Transfer the steamed cauliflower to a large bowl. Mash well with a fork or potato masher until mostly smooth, leaving some texture. (5 minutes)

03

Step

Incorporate Ingredients: Add the almond flour, beaten eggs, cayenne pepper, salt, and pepper to the mashed cauliflower. Stir until all ingredients are thoroughly combined and a cohesive mixture forms. (5 minutes)

04

Step

Form the Patties: Using your hands, form the mixture into approximately 1/4-cup sized patties. Gently flatten each patty to about 1/2-inch thickness. (10 minutes)

05

Step

Pan-Fry to Perfection: Heat 1 teaspoon of olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the patties in a single layer in the skillet, being careful not to overcrowd. (2 minutes)

06

Step

Cook until golden brown, about 5 minutes per side. Add more olive oil to the skillet as needed to prevent sticking. Repeat with remaining patties. (10-15 minutes)

For a richer flavor, consider adding a tablespoon of grated Parmesan cheese to the cauliflower mixture.
Fresh herbs like chopped parsley or chives can also be incorporated for added brightness.
Serve immediately for the best texture. These patties are delicious with a dollop of Greek yogurt or a squeeze of lemon.

Baking them instead of frying worked great! They were still crispy and much healthier.
