In a heavy-bottomed saucepan, combine the whole milk, heavy whipping cream, granulated sugar, cinnamon sticks, black tea, garam masala, black peppercorns, cardamom pods, star anise, and nutmeg. (5 minutes)

Bring the mixture to a gentle simmer over medium heat, stirring occasionally to prevent scorching. Reduce heat to low and cook for 20 minutes, allowing the spices to infuse the cream and milk. The mixture should be fragrant and slightly thickened. (25 minutes)

Remove from heat and strain the mixture through a fine-mesh sieve or colander lined with cheesecloth into a large bowl. This will remove the solids from spices. (5 minutes)

Taste the strained mixture and adjust sweetness or spice level as desired. If the spice level is too intense, add up to 1/2 cup more whole milk to mellow the flavors. Allow the mixture to cool completely to room temperature, then cover and refrigerate for at least 4 hours, or preferably overnight. This allows the flavors to fully develop. (4+ hours)

Transfer the churned ice cream to an airtight container and freeze for at least 4 to 5 hours, or until firm enough to scoop. For best results, let it sit at room temperature for about 5-10 minutes before serving to soften slightly.

For a richer chai flavor, toast the spices (cinnamon sticks, cardamom pods, star anise, peppercorns) in a dry pan over medium heat for a few minutes before adding them to the milk mixture. Be careful not to burn them!
Use high-quality black tea for the best flavor. Loose leaf tea is preferable, but tea bags can be used in a pinch (remove the bags after steeping).
Adjust the amount of sugar to your preference. Some people prefer a sweeter ice cream, while others prefer a more subtle sweetness.
If you don't have an ice cream maker, you can still make this ice cream using the 'no-churn' method. Simply pour the chilled milk mixture into a freezer-safe container and freeze for 4-5 hours, stirring every 30 minutes to prevent ice crystals from forming.
