Scrape down the sides of the bowl and continue processing until the mixture is very smooth but not puréed, and moves around the bowl as a mass. (3 minutes)

Transfer the mixture to a mixing bowl. Cover with plastic wrap, pressing the wrap against the surface of the shrimp mixture. Refrigerate until chilled. (1-2 hours)

Place panko bread crumbs on a plate.

Scoop out 8 equal-sized portions of the shrimp mixture and roll them in the panko to coat. Shape into thin patties.

Heat vegetable oil in a skillet over medium-high heat.

Add the shrimp cakes in batches and cook until golden brown and the cakes spring back to the touch. (About 2 minutes per side)

Drain on paper towels. Repeat with the remaining cakes.

For an extra crispy crust, consider a double coating of panko bread crumbs.
