For a vegetarian option, substitute the ground beef and sausage with cooked lentils or crumbled plant-based meat alternatives.
Feel free to use different colored bell peppers for a more vibrant presentation. Red, yellow, and orange bell peppers all work well.
If you don't have fresh parsley, dried parsley can be used. Use about 1 tablespoon of dried parsley in place of 1/4 cup fresh.
For a spicier dish, add a pinch of cayenne pepper to the meat mixture and increase the amount of crushed red pepper flakes in the sauce.
To make ahead, assemble the stuffed peppers and store them in the refrigerator for up to 24 hours before baking. Add an extra 10-15 minutes to the baking time if baking directly from the refrigerator.
