Sauté the Mushrooms: In a large skillet, melt 1 1/3 tablespoons of butter with olive oil over medium-high heat. Add the sliced mushrooms and cook, stirring occasionally, until they are browned and softened, about 15-20 minutes.

Layer the Gratin: Layer one-third of the potato slices in the prepared baking dish. Season with half of the thyme, salt, and pepper. Spread half of the cooked mushrooms over the potatoes. Sprinkle half of the shredded truffle cheese over the mushrooms. Repeat layers, starting with another third of the potato slices, followed by the remaining thyme, salt, pepper, truffle cheese, and mushrooms. Top with the final third of potato slices. Season with salt and pepper.

Add Cream and Broth: Pour the heavy cream and chicken broth evenly over the potato layers. Season again with salt and pepper.

Top with Cheese: Sprinkle the remaining shredded truffle cheese over the top of the gratin.

If you can't find sottocenere cheese, you can substitute another truffle cheese or a mix of Gruyere and Parmesan with a drizzle of truffle oil.
